The small alchemy of the season - from blossom to fruit

The sun comes in, everything grows, starts, sprouts and flourishes. This powerful energy is served up on plates during the spring-early summer culinary season, with 5 big dinner menus over 16 weeks, following what's happening outside the window.

Old traditions, memories and recipes will be mixed with new forms and modern techniques. Progressive regional cuisine will be told: in March with a tour of handkerchief-sized small gardens, in April with lamb, in May with the first strawberries, elderberries and new stone fruit. June is already summer: the month of the promise of a holiday, wild fields, free roaming and the summer solstice celebrations.
