Our Approach to Dining:

 Our idea of a restaurant differs somewhat from the conventional. Alkimista was born from careful observation of our surroundings, a desire to share, and one essential question: Can we, in a secluded place, drawing on the legacy of more sensible eras, make our own cuisine – one that belongs to all of us – truly lovable in the spirit of the 21st century?

We await your answer — because we believe in hospitality as partnership. Once, the Great Hungarian Plain and the Danube–Tisza region provided much of the country's food supply, and the cooking methods practiced here defined the character of Hungarian cuisine.

For us, regionality and local ingredients are not a passing trend, but beloved, familiar materials and methods of preparation through which we can express ourselves in our own culinary mother tongue.

We often and gladly draw from the traditions of Hungarian peasant cooking, the wisdom of old kitchen matriarchs, and the writings of herbalists and apothecaries. We use modern techniques for centuries-old recipes – and sometimes, the other way around.

We approach the great figures of Hungary's golden gastronomic age with respect – C. József Dobos, Elek Magyar, Károly Gundel, Pál Kövi – and look to their legacy to find what is still worth preserving.

Alkimista is a contemporary interpretation of past eras. Another essential element of our work is its personal nature.
Storytelling, and references to old and new culinary customs, celebrations, and rituals are part of what we do every day.

That is why every dinner at Alkimista is personally hosted by the chef – making our small restaurant truly one of a kind in the country.

THE DINNERS

We welcome guests on three open evenings each week — Thursday, Friday, and Saturday — with dinners running from 6 PM to 10 PM as full-evening programs.

TASTING MENUS: we offer 8-course menus, available either alcohol-free or paired with a selection of 4 wines/beverages. Tables can be reserved for these menus and their corresponding time slots here on the website.
MICRO-SEASONAL cuisine: our menus change every 2–3 weeks, showcasing the finest ingredients of the moment within each season, evolving just as the world outside our window does.
A LIVING DRINKS LIST, featuring pure ingredients, our own brews, and mostly low-intervention, nature-friendly wines, ciders, and grower sparkling wines — this highly personal selection is what we share with you. For guests who do not drink alcohol, we prepare juice, infusion, and tea pairings to match the dinner. For our vegetarian or flexitarian guests, we are happy to prepare a full menu upon request, but we do not cater to fashionable or restrictive diets.

PRIVATE DINING

For those who wish to enjoy a restaurant experience in a private setting with their own group, we offer the unique and intimate experience of private dining for bookings of 10–14 guests — and we are happy to welcome you for dinner, early dinner, or lunch.
